#Fitblog + No-Carb Raw Alfredo!

Goooood morning mah boos!! And hello to all of you new readers from #Fitblog last night! It was a blast to say the least :)

My theme? The Gloves Come Off. Dasright it got a little frisky. I am so good at making titles.

The questions I asked were:

Q1: Do your healthy lifestyle rules always apply, or do the gloves come off in social situations or on the go?

 

Most of us let loose sometimes — which is a good thing! We all agreed that keeping a “healthy” diet 24/7 is not always realistic. We need to indulge sometimes to keep our sanity!

Q2: What is your favorite healthy throw-together snack, meal, or drink? Link it up!

A fave of the group were smoothies — I’m with ya friends. :)

The big answers for #fitblog babes were protein and packability. Nobody wants a spill in their Fendi! (or in my case, the purse you got on the street in NYC)

Q3: The gloves are coming off! What is your favorite “guilty” pleasure? p.s. No pleasure should ever be guilty. Just sayin.

The big three for food: booze, peanut butter cups, and Oreos. #noshame. In other realms, the most mentioned were Jersey Shore and the Bachelorette. 

Q4: Help out a sista-friend: Give me your tips for a healthy college life, in every sense of the word.

The conversation got really fun — the things I gathered were that I should drink a lot, run around naked while drunk, and not go to class. Good advice, no? ;)

But before a girl can #Fitblog like a champ, let alone moderate it, she’s gotta get some goods in her belly.

Last night I wanted two things, and two things only: something cheesy and something tempehtastic. There’s something about tempeh that makes me wanna eat it all day. And the cheesiness — well if you knew me back in the day, you would know that I used to eat either Mac & Cheese or Fettuccini Alfredo every night. With some Cheez-Its and Goldfish thrown in there. I was a big cheese.

Haha.

So, I recreated the noodles that Lisa and I made awhile back (cause they were so good — Lisa you are magical!!) with a few alterations because a. I don’t have a lot of stuff in my house and b. I’m bad at following recipes. Truth.

But I’m using the same picture because good pictures just don’t happen in my house after the sun sets.

CAUTION: These noodles are like crack, make at your own risk.

Low-Carb Raw Alfredo

Inspired by Lisa’s Cheezy Alfredo Kelp Noodles

Prep Time: 30 mins soaking time, 5 minute

Keywords: blender dehydrate no-bake appetizer entree side snack gluten-free low-carb low-sodium paleo soy-free sugar-free vegan vegetarian

Ingredients

  • 1 cup raw cashews, soaked
  • 1/2 cup water
  • 1.5 tbsp. nutritional yeast
  • 1/2 tsp. sea salt
  • 1/4 cup lemon juice
  • 1 tsp. Bragg’s Liquid Aminos
  • 3 packages kelp noodles, drained

Instructions

  1. Soak your cashews for at least 30 minutes in fresh water.
  2. Drain your kelp noodles and place in a giant, family-sized salad bowl. In my case, my “small” salad bowl.
  3. Find your blender and add your soaked cashews, water, nutritional yeast, salt, lemon juice, and Bragg’s. Blend until smooth.
  4. Pour cheese sauce over noodles and massage into noodles with your hands. Yes, with your hands. I promise you it’s a million times easier and faster than trying to move those noodles around with serving spoons — trust me, I tried.
  5. Try not to eat all of the noodles right away.

These noodles taste best room temperature or slightly warm, but not heated. If I’m serving them, I’ll leave them out for at least an hour if they’ve been refrigerated so they’re a bit more noodle-y than crunchy, which kelp noodles can be.

Oh, and the kelp noodles have like 15 calories per bag. And they’re not even carbtastic, they’re a freaking sea vegetable. So don’t feel bad about eating these, unless you eat the whole batch because then you’ve eaten a whole cup of cashews. Not that I haven’t done that before. ;)

I hate that I haven't been able to participate in fitblog chats lately! I really wanted to tune in for yours too. Sounded like a great one. And my guilty pleasure – FROSTING and CANDY CORN. Today at least. I have a random mad craving for both. LOL

I was so excited to fitblog for the first time but I ended up having to work. Boooo. I was totally reading the convo at work though.
Q1: I definitely indulge every once in a while…or more. Sometimes you just have to stay out till 4am eating swedish fish and miss 5 am spin.
Q2: Nanner and almond butter
Q3: Frozen swedish feeeesh

I like apples or banana with PB for a healthy snack…and fro-yo or Pringles for an indulgence!

Good luck at your interview! Those noodles look delish. I've made cream sauce out of cashews before. So dang good.

That kelp alfredo looks so good! I would make it asap except I don't know if my grocery store carries the kelp noodles.. time to go be investigative.

My healthy lifestyle rules definitely don't apply all the time. I use to be so paranoid about sticking to them in the past but it wears on you after awhile. Now I just go out and LIVE. If I eat something that's not so healthy or not so vegan then whatever. Sure I'll stress a little but most times I just carry on. Life is too short to live it perfectly. Perfect is boring.

My advice for college: have fun, and do what you love. I've shadowed a ton of people on jobs who all say that they wished they majored in something they were more passionate about than what might have been more practical. Which is why I'm a happy fine arts major, songwriting minor livin the dream as a fashion intern. Yayyyy
Oh and make sure that you ride home in a shopping cart at some point or another. Have to admit I've done that once or twice :)

That recipe looks so good but I would have to switch out the kelp noodles for real noodles! I just can't stand the kelp ones….I tried them and nearly tossed my cookies!!! They're so bitter!!! __Congrats on a sucessful fitblog!!!!

Haha what great questions!!Best throw together food is a PB&J with Cheezits (im a cheeseball too) ,its important that I can throw it together quick and its filling, my fav guilty pleasure is def Oreos with some Jersey Shore thrown in, and the best advice for college is just because everyone else is out getting drunk and stayin out late doesn't mean you have to. You'll be the only one not tired, failing, and without the freshman 15. Trust me!!
