{Road Trip} Eats: Homeward Bound

Guess who’s on her way home! Meeeeee!

Don’t mind that quick childlike moment. It’s casual. I’m so sad to have left the Southern Virginia sands (and any future of getting more bronze) behind, but I’m ready to be home. Hitting the gym, making fancy yummy things, and seeing all of my buddies. Lilly bunker, can’t wait to see ya.

I got a little bit of color on my trip.

And ate yummy things. Last night I was bad (oh so very, very bad) and had some BBQ-d Southern chicken which was so, so good.

Afterwards, we swam at Grandma’s beach and saw some dolphins swimming! I didn’t get any pictures of the dolphins, but I got an awesome shot of the sunset.

How beautiful?!

This morning, I started my day with quinoa, peanut butter, and blueberries. Best recipe ever. To come your way! On the side, I had Earl Grey with Almond Breeze Almond-Coconut blend and stevia instead of my usual coffee. It was a nice switch-up! Then, it was time to send off for home.

Lunch was had in the car.

Spinach, half of an avocado (chopped and scooped), a cup of pre-made quinoa from this morning (always planning ahead!), and Spicy Peanut Vinaigrette from Trader Joe’s. Great combination! Held me for a good 3-4 hours.

Snack was a Salmon burger from TJ’s with ketchup.

Satisfied. On the long car ride (about 11 hours) I’ve been blog-reading and brainstorming. You have no idea how excited a girl can get about going to the gym while sitting in the car for this long.

But really though.

Dinnertime rolled around, and I needed some nourishment. I was hoping for a Panera to come up, but the next best thing was a Starbucks. Since they didn’t have my beloved Spinach and Feta wrap, I got an oatmeal with nuts, Passion Iced Tea on the side.

LÄRABAR for dessert! I’m not quite satisfied, so I’m going to see if I can find some protein on the way home.

After a few days of not working out, I am so giddy to get back to the BURN.

Eeeeee my favorite breakfast lately is quinoa with nut butter (usually pb) and either berries or banana, topped with almond milk! So good!!!!!!!!! I even brought it to night shift last night and it held me over the whole night woo woo nutritious foods! I also just decided to have tea instead of my usual coffee, I steeped chai tea, added stevia and then foamed up some almond milk to put on top, so yummy :) . Have a great day!

Mmm, Earl Grey is always a good choice. I have yet to try the Almond Coconut blend, but it sounds delicious! You are crazy organized with your road trip food – and breakfast for dinner never fails to hit the spot ;)

I’m not a huge beach bum – maybe I’m spoiled because I live a block away from one – and I get bored way too quickly if I spend too much time in the sun. Give me the mountains any day! (Oh wait, I’ve got those too…)

Such healthy eats for a road trip day! Totally impressed! That breakfast sounds amazing! I would never think to combine quinoa, blueberries, and peanut butter but I think I might have to soon! Have a safe trip home :)

I hear ya on the road trip stuff! Every time I’m in the car for longer than like 2 hours, I’m allllways anxious to get out and do some yoga and strrrretch out those hips! But doesn’t that workout feel amazing once you get it?! Oh yeah! :)

That picture of the sunset is breathtaking!! I’m so glad you had a great time at the beach, and love your giddiness about getting back to the gym. You’re too cute.

My husband and I will be vacationing in Greece for the first few weeks in September. CANNOT WAIT!

I do love the beach! I’ve been in the OC for the last weeks and have gone to Laguna Beach each weekend which has been loads of fun. It’s crazy how gorgeous the weather is every single day. Can’t wait for your pb and blueberry and quinoa recipe! Sounds soo good!
