Hey there! Guess who made something yummy last night?
Yeaaaaaaah buddy.
Last night, I came home from my road trip with a serious need for some protein (and minimal carbs) before bedtime. Carbs at sleepy time = I’m going to be up all night. Just how it is. So, I threw together a few ingredients that I had on hand (which you might too), and made this delicious cupcake of satisfying goodness. It really is that yummy.
For all of you that need a little extra somethin’ before bedtime (or even while you’re waiting for dinner!), this is a great way to hit the spot when you need it most. Small, simple, and satisfying, this is bound to keep you from stuffing your face with a whole box of Oreos. Not that it’s ever happened around here before.

Protein Cupcake
Prep Time: 2 minutes
Cook Time: 3 minutes

Ingredients (1 Cupcake)
Cupcake
- 1/2 scoop (or 2 Tbsp.) vanilla protein powder
- 2 Tbsp. coconut flour (or flour of choice)
- 1 Tbsp. chia seeds
- 1/4 tsp. stevia extract
- 1/4 tsp. baking powder
- pinch of sea salt
- 2-4 tbsp. milk (almond-coconut blend ova hurr)
Toppings
- square of dark chocolate
- scoop of nut butter
- granola (I used Pure Bliss Eats granola)
- maple syrup or agave
Instructions
- Add protein powder, flour, chia seeds, stevia, and baking powder. Mix.
- Pour in just enough milk to create a dough-like consistency. Add more if necessary. You don’t want the dough to be too tough!
- Grease a mug or bowl with coconut oil (or butter if you’re into that), and pour in batter.
- Microwave for 2-3 minutes, or until the top has developed a slight crust.
- Let cool for a minute or so, and top with whatever makes you chipper.

This isn’t really a cupcake. It isn’t even anything close. Let’s be honest here, everything is so much fancier when you give it a cute name, next to something as gross sounding as “cupcake”. If I had called this the Protein Microwave Thing, it wouldn’t be nearly as awesome. Truth? Amen. But if you’d like to make it look more like a cupcake, you can add your own frosting by mixing a couple of tablespoons of protein powder with almond milk, or topping the thing with coconut butter. Yum.

I just made a variation of this for lunch – normally I go for the typical pumpkin protein muffin with coconut flour, but I may have to try your chia seed recipe. These things are amazing when it comes to crushing my hunger, but for cravings, I tend to whip up a quick hot chocolate (made with skim milk unless I have almond milk around, but whatever floats the boat on that particular occasion)
Home-made hot chocolate is unreal. I load it up with cocoa powder!

I love easy microwave cupcakey things like this – I crave banana bread ALL the time (kind of weird) so I just make a smaller version in a mug, toss it in the microwave and in a few minutes I have my very own piece of banana bread! So yum!
I grew up eating banana bread 24/7. Trust me, totally normal.

The carbs before bed things is so true. I can drink a whole cup of coffee and be knocked out 5 minutes later, but a bowl of oatmeal and I am up all night.

Mm sounds tasty! Sometimes I’ll eat it for breakfast after a workout, or before bed since I know I’ll be up super early working out the next morning. Happy Monday!

I have tried to make this a couple times without success. The first time I followed your recipe, but it was very dry and extremely crumbly. The second time I added more coconut milk and some coconut oil, but again it was dry and very crumbly. Any suggestions??
Did you add chia seeds? The more chia (or eggs!) the better!
I added chia seeds! What was the consistency of your cupcake? Maybe I will try flax or egg! I am determined to make this work!
