Hi everyone! Happy Monday. If you didn’t notice, I took the weekend off from blogging to watch the CrossFit Games and do a lot of waitressing. It happens.
Saturday Farmer’s market.
Taking a break like this is also great for writing inspo (like when I find kick-ass eggs at the farmer’s market and put them in everything). I love finding awesome things out in the real world to share with you guys. Living life on da freakin weekend is cool too.
Saturday was spent on a double shift (a kid was eating crayons… what), and then later that night I went out, getting home waaaay later than reasonable for this girl. Work at 11am on Sunday was me riding Strug City bus in a serious way. I got through it and sat on my butt the rest of the day. Then we made scallops.
Before throwing them on the grill, I let them sit in a marinade of extra virgin coconut oil, lemon juice, garlic powder, and sea salt. They turned out BOMB, and I topped them with more lemon juice after leaving the grill. We paired the scallops with sauteed broccoli, mushrooms, and tomatoes, as well as a roasted sweet potato.
So fresh so cleannnnn.
Breakfast this morning was pretty random, but simple and way yummy. I woke up with a tummy ache (which has been a recurring theme for the last few days), so I started off with fresh fruit:
And had Part Two about half an hour later.
Three egg whites, one whole egg, one tomato; all sauteed in coconut oil. Quarter of an avocado and ketchup on top.
Carbs, protein, and healthy fats. My paleo friends would be proud.
