{Eating Clean}: “Want to get some oms?”

Last night I made cookies.

Today I went out for omelettes.

Hi there! My favorite brunch buddy, Lisa.

Has anyone noticed that I really like to take pictures of people at awkward // eating moments? Bad habit. Gonna stay that way.

Lisa had been in California for a bit (look at how tannnnn she is!), and we knew we had to reunite at one of our favorite brunch places, Jines. We go there every time we eat because a. It’s close, b. It’s cheap, and c. They serve breakfast all day. The real reason is choice number three.

Spinach-Mushroom Omelette with cage-free, organic eggs.

I don’t eat out a lot, but when I do I get the fanciest, tastiest thing there is. I would get pancakes but I’m trying to be all protein-packed and stuff. We bonded over birthdays (hers is tomorrow!) and talked about our respective weeks. Catching up with Weekend Stories over omelettes is always a thousand times better because there is ketchup in your mouth.

Try and argue with that, I dare you.

Never enough ketchup. I think I used a solid quarter of that bottle. All of you healthy people are probably shaking your head, but it’s fine. It has tomatoes in it.

Afterwards, I needed some caffeine, so we stopped by Boulder Coffee Co. to get some iced teas. I chose the Yerba Mate Latte,

and Lisa chose the black.

Added stevia and I was good to go. The nice thing about tea is it doesn’t give me the what-is-happening-to-me rush like coffee does these days. It’s a nice, slow “surprise, time to wake up!” effect, and I seem to get the impression that my stomach likes it better too. I think I’m just too lazy to make my own.

Time to get some work done, and have some snackage! For some reason, the omelette didn’t hit me as hard as it usually does. Maybe it was the absence of cheese? Regardless, I’m about to make something delicious and nutritious. You’ll find out what it is on Instagram. Oh man. The mysteryyyy.

Just so you know, it will probably just be nut butter and chocolate chips. Again. Or a cookie. I’m so exciting.

COUNTDOWN: My birthday is on Monday!!!! Just declared it a National Holiday. I dub thee free from work. Go to the beach or something.

How are you spending your hump day? —– Just working my life away. I was planning on riding my bike into work but I had another flat (5 in 3 days = not fun). So I’m going to go by the Bike shop to upgrade my tires and probably stop by the Local Co-Op to get some nutritional yeast to make more popcorn. I love the stuff. Popcorn is the most amazing snack ever for us crazy plant eaters.

Favorite brunch foods? —– Probably vegan pancakes, which is probably impossible but it sounds yummy and maybe a Vegan Dunkin doughtnut, sounds amazing, I haven’t had one yet.

Are you going crazy for Friday yet? —– Not really, I really can’t wait for next thursady, My fiance is coming down from Thur-Sun and we haven’t seen each other in about a month. And I get to test out running, hopefully my knee feels better.

Excuse me, are you not celebrating Birthday Week?! Maybe I’m the only one who is crazy enough to do it anymore, but I have faith in you. Birthdays are the BEST & I’m so jealous of you because I ALWAYS wanted a summer birthday!

I’m addicted to nut butter and chocolate chips. Seriously. It’s a problem. I have bags of different kind of chocolate chips and a half shelf full of different nut butters. Tell me that’s normal?

Jines is fantastic!!! I used to LOVE eating there, but haven’t since going gluten free. That omelette looks amazing!

That omelet looks so good. I too LOVE ketchup!! I eat it on my baked potatoes, eggs, and even on top of sliced tomatoes! Try eating it on your baked potato and let me know what you think. Its soooo good!! Anyways, happy early birthday! I hope youvhave lots of fun stuff planned with lots of your favorite foods! I always go for pancakes larger than a Frisbee topped with peanut butter, berries, and hot maple syrup. :) ice cream cake for dessert!
