It’s midnight, which means IT’S MY BIRTHDAY!!!

Wow. I love birthdays. And holy crap, I’m not even going to tell you how old I am because that would make me feel like both the youngest person in the world and the oldest. In relative terms.

I’ve lived a lot of years (I think that starting at age twelve I started to become more adult than necessary, so let’s just say it’s my 30th birthday, okay?), and I still have so much to learn. I like to think that there are a lot of things I know well, but I still don’t know how to french braid. Or use a slow cooker. I’m guessing it’s not that hard, but still, it’s a skill I need to learn.

But when it comes to food, I’ve learned a lot. About what’s good for you, what’s bad for you, and what lies in the grey area of my weekends and late-night excursions. If there is one health myth that I would like to de-bunk right now, it’s about fat.

Fat is your friend. Fat is good. Fat should come from the most wholesome of sources and go straight into your frying pan. Onto your almond flour pancakes. Into your smoothies. Fat is yummy and good for your tummy.

Fat is also great in the form of almond butter that goes on my protein pancakes. The recipe? Super simple.

  • 1 scoop vanilla protein powder (I used PlantFusion, which I was recently sent to try and absolutely love)
  • 1 egg white
  • almond-coconut milk until everything is stirrable (I’m kind of over the fact that it’s not a word)

Simply fry on a skillet with a nice pat of coconut oil. Mmm. Buttery.

The point of all of this is that I really like coconut oil. It’s great for every inch of you, and yes, you can even use it as lotion. I’m not kidding. It’s edible. And I was not paid to say that because it’s true. Well, I have Crohn’s Disease and I use coconut oil on an almost daily basis. I really like the fact that it has tons of health benefits, including the fact that it soothes my stomach issues.

Happy birthday! I’m right there with you as a secretly middle-aged teenager. Goodness knows what I’ll be like when I actually break 40… That pancake recipe sounds delicious – I actually have all of the ingredients (admittedly, there aren’t too many) on hand, so I may try that come tomorrow morning!

Have fun with the apartment shopping – it’s crazy how much stuff you need to buy when you get your own place. All those little things like dishcloths and pots and pans get taken for granted when you just have them around…

Oh, and as for the coconut oil, I’d use it to bake. Cookies, muffins, scones – I bake on a regular (perhaps too regular) basis, so it wouldn’t go amiss.

Great giveaway doll! I love fat…ESPECIALLY coconut oil, or coconut butter, or nut butter, or…you get the picture. And that’s really saying a lot since I used to be like, “Oh hand me the fake butter spread so I can add it to my reduced fat biscuit to have along with my fat free egg whites” And I wondered why I was hungry all the time! Lol

I have a jar of TT’s coconut oil that I use for everything! I love how the coconutty flavor pops it’s way into my pancakes, muffins, breads, etc. And any time I get any on my hands, I always rub it on my elbows…can’t be having dry rough grandma elbows! Hopefully I win because I just realized yesterday that I’m about out! Eeek!

Ooh I love coconut oil! It can be quite expensive, but so worth it. I would most likely use it in my cooking to replace other, less healthful oils. If I had a BIG tub, I’d even try it as lotion, because it does always feel SO good on my hands when I use it to bake!

My favorite thing to do with coconut oil is to top my banana protein muffins with a bit and then sprinkle with sea salt. Sooo good! I also love to cook sweet potato wedges in coconut oil. Ugh I love coconut oil.

I would do a few things;
1- Use it for my baking dishes ( I bake like a crazy fool all the time)
2- Make my own make up remover towelettes
3- Cook with it (replace icky corn oil)

Basically I would just invent things to use it in/on and enjoy it fully.

I would like some pancakes whipped up in a bit of coconut oil now, thank you very much! Maybe some birthday pancakes… Happy Birthday!!!!

I would use it for baking no doubt, but also for:
- salad dressing
- in my coffee
- on my uber dry skin

I already use coconut oil in my oatmeal and use it for cooking in my cast iron pans. Once the weather here is not so humid, I’ll be using it on my dry skin as well.

I feel you on that apartment list, I’m doing the same thing right now. The shopping part is awesome the getting it all organized and packing all up part sucks.

And the real question is what wouldn’t I use coconut oil for. I’m pretty sure it’s a magical potion that’s good for everything.
