Unexpected Breakfast + Traveling WOD {Fitness Goals}

Guys, I made the world’s most delicious discovery ever: If and when you wake up and there is an egg missing from your carton and can only use two, the only solution is to just throw some serious protein in that scramble.

Duh. There were only two eggs in my carton this morning (I swear I left three, I don’t think I’m imagining things), and was like, what is going on here. The whole world is going to crash and crumble if I don’t have a full and satisfying breakfast. So I used a whole filet of tilapia and made stuff happen.

Ingredients:

  • 1 filet of tilapia
  • two eggs
  • at least 1 tbsp. of coconut oil
Directions:
  1. Heat up the coconut oil in a pan on medium (or medium-high, my pans are stainless steel and heat up reallll quick), and add tilapia filet. Fry on one side until almost cooked through, then flip.
  2. Once tilapia is cooked fully, crack the two eggs and scramble with the tilapia.
  3. Add sea salt and condiments of choice (aka hot sauce).

You don’t want to see a picture of this. But you’re totally welcome. This was kind of mind blowing this morning because I thought it would taste weird with fish in it. Nope. Naw. Tilapia is a white fish, and has a very mild flavor — it’s almost like chicken in the sense that it takes on the flavor of whatever is around it. Talk about awesome.

So, let’s talk about CrossFit! I’ve been kind of off the radar for 24 hours, and let me tell you, friends. I start to miss this lil’ blog after half a day of neglecting it. BUT, I’ve been adjusting. To a new apartment, to finally being registered for classes (and having the best schedule in the world — no class Mondays until 6pm and no class Fridays at all), and to getting in the groove of going to CrossFit and showering right afterwards (I know people, big steps).

Yesterday’s workout was a body weight WOD, and was actually a lot of awesome. I loved that you can easily do this at home (or while traveling), and it kicks your booty in a serious way. Not something I would do every day (I like to lift too much), but good for those of us that can’t get to a Box every day.

Yesterday we did pull-ups for skill work, and I was able to get my chest all the way to the bar, unassisted. This is a huge gain — I used to not be able to do a pull up at all! Always making small steps that lead to the bigger picture.

I talked to some of the coaches here at my new Box, and I told them about my goals: Go to Regionals as an individual, and eventually compete at the Games. Based on my strength right now, going to Regionals as an individual is most realistic for 2014. I have about a year and a half to train, and I am going to get my booty in gear.

Last night, FitFluential hosted a chat with ViewSPORT and we talked a lot about fitness and health goals. I loved being able to share my goals with everyone and motivate others to make their dreams a reality.

Congrats on the chest to bar pull up!!! That is huge! Nice work! I wish I had been able to join in on that chat last night! I would love to go to regionals at some point too as an individual but was always too afraid to actually admit my goal! Thanks to you I’m now proud to say it :) I think we’ll both be there in 2014!

Protein + eggs is awesome. Salmon (smoked salmon in particular) is a fantastic pair with eggs. You can also aim for things like lentils in your eggs, or vegetable textured protein, especially if you add a little salsa. Good find!

i always associate tilapia as a lunch or dinner food, i’m going to need to expand my horizons and give it a go at breakfast now!

what a great b-fast idea!!! yum! i have done eggs scrambled w leftover thanksgiving ham before, but never with tilapia! im going to have to try that!!! thanks for the great idea!

Good job on your unassisted pull-up! :) One of my fitness goals is to run a half-marathon faster than my first. :) I just started training for a half in November so I’m currently working on this goal.

Congrats on the pull-up! Seriously, that’s huge! I remember I did a pull-up during my sophomore year of high school and I was incredibly excited about it. I honestly haven’t done one since that year. It’s definitely on my fitness goal list. That, and run a marathon, which I’m on schedule to do in October. Eeeeeek!

I want to finish my first half marathon strong and in love with long distance races. I would love to try cross fit. I dont know anywhere close to me that does it. I have never heard of a BOX. I think in South Alabama we get a little behind in trends. Great post. #SPAlove

my CrossFit goals– there are lots! I want to get strict pull ups unassisted, muscle ups, double unders, BS over 200lbs, DL over 225lbs, handstand push ups… The list goes on.

I have to admit, tilapia with eggs sounds a little nasty. I could eat both in one meal… but not mixed. LOL.

the other morning I ran into the exact same problem (why is 3 the magic number for eggs??) so I added chicken and goat cheese – omg! try it!!

Congrats on the chest to bar pull up! I think Regionals is an awesome goal! Putting goals out there is the best way to hold yourself accountable and to make it happen
