Beautiful salads….
Greens topped with pan-seared pork loin, blueberries, sunflower seeds, olive oil, and balsamic vinegar. Next time I’m going to try some different flavors — balsamic wasn’t my favorite with the pork.
Eggs. With salsa, because it’s so easy to scoop into a bowl.
These are also eggs. On top of spinach that I sautéed in coconut oil with minced garlic. Yummyyyyy.
Bacon and eggs. Times three. With my custom Nano’s rocking everything all over the place. I try really hard not to wear these every day (want to save these beauties for when I actually start competing), but it’s hard. They’re just so stinkin’ beautiful.
P.S. Bacon and eggs –> keeps you full for an insane amount of time. Try it. Or don’t, I won’t be offended.
FROYO. I know what you’re thinking. What, Katelyn? Doesn’t that have like, sugar and dairy and stuff in it? It definitely does have all of that stuff in it. But it’s also super yummy and once a month I like to eat whatever I want. So I do. We recently got a YogurtLand just off of campus, and it’s kind of dangerous.
Make that really dangerous.
The Disney Store. When at the mall, humor your childhood a little bit.
And get coffee. I got a refill five minutes later. The lady literally thought I was crazy.
No big. Get more espresso.
This has become a staple for me. The library cafe sells double-shots of espresso and I’m taking full advantage. No one ever asks for espresso, apparently! They’re always surprised when I ask for it. I take advantage of the freshness.

I LOOOOVE americanos with sugar free vanilla from Starbucks! Question- when you say you use balsamic… is it balsamic vinegar & olive oil? Do you add anything to it?

My pick-me-up drink of choice is water, water, water, and — get this — DECAF coffee! I think it has a placebo effect on me (that’s what I tell myself). Caffeine makes me feel shaky and sick, so I always hit up the decaf.

if I ever went paleo I def would have to do like 80-20 because I wouldn’t be able to give up chobani on fro yo!

I used to be ADDICTED to espresso shots! We have a little coffee house at the hospital where I work and I was known to get at least 4 single shots a day! I figured why waste diluting it in cream and sugar when you can get straight to the GUD STUFF?! Lol

My latest pick-me-up drink? DandyBlend (a coffee substitute because my stomach is sensitive to real coffee) and I just discovered Silk creamer!!!! Even though it has 3g of sugar per serving, I’m still loving that I can now drink my DandyBlend (which is actually good for your liver) and enjoy it.
