Eating Healthy, Indulging, and Fake Chipotle… in my RealFlex.

Hey everyone! Can we talk about how MIA I’ve been lately? Sweet goodness, I can hardly even muster the energy // brain power to Tweet, but I’ve been doing better with this. Finally figuring out how to balance classes, training, and what I love the most — yummy food and all of you guys.

As exciting as classes are, I think I’d rather ramble about other stuff. Like froyo.

Remember when I started my paleo “approach”? The best part is that it’s just an approach. I’m all about indulging once in awhile. It’s really hard to say no once (or twice) a week when it’s half the price of the good stuff at home. Talk about a steal.

Almost quite literally running to class in my Reebok RealFlex. How hot are these shoes?! Love getting comments on my “fresh kicks” around campus. Exact words.

The way I arranged my schedule is such that most of my classes are in the second half of the day (only have one 9:30 am class, the rest are 2pm or later), so I spend a lot of time in the mornings eating breakfast, doing a few things around the house, and training. It usually looks something like this:

  • 9am: Wake up, brew espresso, make eggs and/or stir up some nut butter with fruit. Coconut oil and stevia in the coffee.
  • 10-10:30am: Leave for CrossFit. Train from about 10:30 or 11 until 12 or 12:30. Recovery shake (Progenex) immediately after my workout.
  • 12:30-1pm: Make food, check emails, probably not shower until right before class because I’m a bit lazy. Life would be so much easier if I didn’t have to shower. (can I get an amen?!)

The rest of the afternoon is spent either in class, making dinner, or doing schoolwork. Which sucks because I am always so out of the blogging loop! Luckily Facebook Chat and emails are always there to keep in touch. I’m recently getting back to helping some of my bloggy babes with graphic design. Feels so good to be getting back in the groove!

But, being so busy often means sacrificing homemade meals for ones on campus.

We have a dining center called Kimmel, which is our ultimate late-night food court that’s also open on weekdays. I take full advantage of this. They recently opened Queso (or “Fake Chipotle” as I call it), and I can get a solid meal for about $7. Salad bowl with veggies, double the chicken, and guacamole FOR THE WIN.

Fullness in my belly, all class long.

Other yummy things:

Tuna cakes with marinara. Great protein-packed late night snack!

The best healthy dessert // snack to tackle chocolate cravings. Almond butter with half a chopped apple and chocolate chips. Yuuuuum.

Green juice! FINALLY back in my life! It’s been so long, and since I have so much trouble getting enough veggies in, green juice has become a seriously simple (and FAST) way to get my nutrients and good carbs. Energy, I can feel you now.

Like my Reebok CrossFit wristband?? ;) I get soooo many comments on how bada** it is. Motivates me every day to #GETAFTERIT.

Can’t wait for the Paleo slow cooker recipe! I love your Paleo “approach” especially if it allows fro yo! I’m all about a balance and while I do try to eat Paleo I think it’s very important not to feel like I have to eat 100% paleo 24/7! That would be quite the challenge ;)

Sounds like your a busy girl!! Looking forward to the paleo recipe, as I’m doing strict paleo for the rest of this month. Lately, my evening snacks have been a diced peach, sunbutter, mixed in vanilla almond milk…..yum. Your sack looks pretty yummy too!

Your schedule sounds like mine – all my classes are in the afternoon, so I use my mornings for working out and wasting time too haha.

Also that Queso salad bowl looks so good! I wish we had food like that on my campus!

busy girl! I did the opposite in school all my classes were over by noon or one and then I had all afternoon which was pretty nice! senior year i was off on friday, too! Glad you are doing well.

Last night you inspired my bedtime snack: scoop of hazelnut butter, sprinkle of 100% dark chocolate chips, drizzle of honey and grind of sea salt. SOOOO good!!! Love your paleo ‘approach’ too- life is too short to follow some program 100% that involves being super rigid and depriving yourself of treats! #froyoFTW

OMG, you cannot open a post with a fro-yo picture like that . Too amazing.
I understand how hard it can be to get back to class and find ways to eat healthy. I currently have night classes after work so I just don’t have time to cook.
Love how you are still finding good alternatives.
Inspires me to do the same.
