Say it With Me: MEAAAATBAWLS

Can’t stop. If you hear this song blasting from a car around Syracuse, it’s probably me. I don’t even want to ask Spotify how many times I’ve listened to it.

Let’s talk about meatballs.

The other night, I spent some serious time thinking about what to do with this ugly-looking pound of ground beef I had in my fridge. And then I was like, duh….. meatballs. IN THE CROCK POT.

I took the general format from Juli’s recipe for Crock Pot Sweet Asian Meatballs (HOLY CRAP these look good), but I only have so many ingredients. So I took the meat-egg-flour-sauce ratio and ran with it.

Crock Pot BBQ Meatballs

Prep Time: 10 minutes

Cook Time: 2-4 hours

Ingredients (4 servings)

  • 2 medium red onions, diced
  • 1 lb. ground beef (grass-fed and organic for me)
  • 1 egg (cage free, organic)
  • 1/3 cup almond flour
  • 1 tbsp. avocado oil (or another high-heat fat)
  • 1/4 cup of your favorite BBQ sauce (I used Dinosaur BBQ)
  • 2 tsp. Italian seasoning
  • sea salt & pepper

Instructions

  1. Dice your onions and place in the bottom of the pot.
  2. Whisk your egg in a large mixing bowl and then add all other ingredients. Mix together until everything is even-textured.
  3. Divide into four balls (or smaller if you prefer). Place on top of the onions.
  4. Set the slow cooker either for 2 hours on high, or 4 hours on low.
  5. Enjoy with more SAWCE!

yummers! I have a crock pot and use it a few times a week. the downside? having to smell the delicious food ALL DAY LONG.

I’m obsessed with that song too! I make meatballs every week. Today I made turkey meatballs with cranberry bbq sauce. Out of control.

Well, I don’t have a slow cooker yet, but I would probably love one to cook some yummy veggies in!
Sad part of being eating plant based is no more meatballs.
My day is awesome because I did a ton of grocery shopping and will be making chocolate almond butter and I just bought a new Ninja food processor!

I heart my slow-cooker! Those meatballs look delish. Sounds like you’re doing a stellar job of cooking while at school, it’s a tough environment to keep up with good eats. And Maroon 5 has been a fav of mine lately too! Enjoy.

Love this easy peasy recipe and love meatballs….all kinds! I really like using a crockpot, but seem to only use it in the winter for soups and chilis. Maybe I need to get a little more creative.

I just thawed out some grassfed beef last night and I’m totally going to make these! I just have to grab some onions and bbq or maybe make the bbq if I can find a good recipe. Pinned these delicious meatbawls!
