Sandy Trip Update + Chaco-Cado Fudge Pudding

Good morning, everyone! Thank you so much for your feedback!!

I was recently made aware of a blogger in NYC who lost her home and currently has a donation fund set up for herself and her family. Thank you, Theo (who talks about more ways to help the cause), for letting me know about this. You can read her blog HERE and send your donations HERE. Wow. The internet does some seriously amazing things.

On that note, I promised you all a healthy dessert recipe and I deliver on my promises. (usually)

Let’s talk about that stuff.

Way back in the blogging day when I was eating what they call a “vegan diet”, I started to get creative with my food. It’s definitely a true fact that your past shapes your future — because during my veganism, I learned, hey, avocados are yummy! In fact, avocados are pretty stinking good for you, and taste semi-mind blowing when you mash them up and make them look like pudding.

Well who woulda thunk.

Chaco-Cado Fudge Pudding

Prep Time: 5 minutes

Keywords: no-bake raw dessert snack gluten-free high protein kosher low-carb low-sodium nut-free paleo soy-free sugar-free vegan vegetarian

Ingredients (1 serving)

  • 1/2 an avocado
  • 2 tbsp. unsweetened cocoa powder
  • 1/2 tsp. stevia extract
  • pinch of sea salt
  • 1-3 tbsp. unsweetened coconut milk
  • 1 tbsp. cacao nibs (and/or other toppings)

Instructions

  1. Halve, hash, and scoop out your avocado into a mixing bowl.
  2. Mash with a potato masher or a fork until sufficiently mushy.
  3. Add cocoa, stevia, and sea salt, then pour the milk into the bowl.
  4. Mix together until mixture has reached a pudding-like (or fudgy!) consistency.
  5. Top with cacao nibs and other toppings as desired. Mix together and it will all be crunchy.

I make this stuff when I’m in the mood for something sweet, could use some healthy fats in my life, or the avocados aren’t pretty enough anymore to simply be sliced over a salad.

Makes my belly full and happy. Win.

Just got back from workout #1 (check out this workout from Invictus; I did A, B, and C), and plan on doing workout #2 later this afternoon. I smell a metcon coming my way. I’m excited.

wow this is really great for you to network together to try and get people to help out in NYC. Thanks for the information!

My workout today is Pump & Shred from Les Mill program and my favorite unhealthy snack fruity candy, of any kind. I avoid it by snacking on frozen berries.
